E una sabbia fina che ti rimane attaccata, scaldandoti per effetto di un sole rovente. Si tratta di Tropea, in Calabria, localita\u0300 affacciata sul Mar Tirreno, meta turistica ambita per i suoi panorami suggestivi. E sulla cima di uno scoglio, si erge il Santuario di Santa Maria dell\u2019Isola, probabile abitazione di eremiti fin dal VII secolo, ricostruita piu\u0300 volte a causa degli eventi sismici che l\u2019hanno colpito nei secoli. Proclamato borgo piu\u0300 bello d\u2019Italia proprio quest\u2019anno, Tropea e\u0300 ricca di leggende, tradizioni tramandate di padre in figlio, colma di agrumeti, vigneti e uliveti. Nel mese di luglio, e\u0300 possibile partecipare alla Sagra del pesce azzurro e della cipolla rossa di Tropea, prelibatezze locali tipiche della tradizione locale. Proprio in occasione della proclamazione di Tropea come \u2018Borgo dei Borghi 2021\u2019 e\u0300 stato disegnato un logo che esprima tutte le bellezze di Tropea, se ne e\u0300 occupato l\u2019architetto Fabio Rotella. \u201cUn pensiero per la mia terra. Dalla cultura Greca, la mitologica \u2018Tropis\u2019 che vuol dire \u2018carena di nave\u2019, creata da Ercole figlio di Giove, una Perla posata su di una roccia a picco sul mare verde smeraldo. Un disegno logotipo composto da alcuni dei simboli che rappresentano Tropea, il Borgo dei Borghi d\u2019Italia, le icone della sua cultura, il Santuario di Santa Maria dell\u2019isola, il Duomo, il Sedile Dei Nobili, l\u2019ombra sul suo mare ne definisce l\u2019unicita\u0300 mediterranea. L\u2019amore per la mia terra, forse anche la lontananza, mi porta verso un bisogno di ridarle qualcosa, come per ringraziarla per le sue espressioni di bellezza e per le emozioni che porto dentro. Tropea, Perla Degli Dei\u201d. Con queste parole, il grande architetto Fabio Rotella, dona alla Citta\u0300 di Tropea il logo che, da oggi in avanti, la identifichera\u0300 nel mondo come destinazione turistica. Un lavoro che ha impegnato per diversi mesi lo staff dell\u2019architetto Rotella e che oggi e\u0300 stato consegnato materialmente al sindaco Giovanni Macri\u0300 come dichiarazione d\u2019amore per la Perla degli Dei. Il lavoro sara\u0300 patrimonio della Citta\u0300, ma potra\u0300 essere utilizzato da chiunque ne abbia interesse a patto di rispettare il relativo disciplinare. Tropea onion, rich in sugars in the form of polymers, fructose and glucose, during cooking breaks the polymer chains releasing sugars that can be classified into pure sugars, obtained thanks to caramelization and those that interact with protein structures. In the past, anchovies and sardines were fished with \u2018minaita\u2019 and this gave them a very particular flavor. By the end of September the scrap merchants prepared the preserves by putting them \u2018sutta Sali\u2019 (salted, ed). They would sell them in winter or use them to feed their families. The Osteria della Cipolla Rossa, a simple restaurant in Tropea, offers delicacies based on local products or fish such as sea bass, anchovies, prawns, coming every day from qualified suppliers. Architect Fabio Rotella rolls back the years: \u201cMy generation is, perhaps, the last to remember the old port with the fishermen and merchants who have made the history of the Tropean navy. They used to fish with a type of net that is no longer used: the minaita. With very tight meshes, it was used to fish anchovies and sardines in particular. These got stranded with the opercula, bleeding to death. That\u2019s why their meat tasted differently. The effort and work of the fishermen was huge. Tale intervento e\u0300 stato reso possibile grazie all\u2019incontro dello chef con agricoltori, allevatori del luogo, presidi slow food come la \u2018Nduja di Spilinga o il Pecorino del Monte Poro che, con estrema capacita\u0300 hanno contribuito a rendere la cucina del ristorante una vera e propria esperienza sensoriale. Adiacenti alla villa troviamo gli orti e gli agrumeti che riforniscono costantemente la cucina dello chef Bettoni. La sala, affacciata da una parte sul chiostro restaurato e dall\u2019altro, sul giardino di piante mediterranee, accoglie gli ospiti in un\u2019atmosfera raffinata e gradevole.
