Per questo progetto, la chef ha scelto di essere affiancata dai suoi due ex sous chef del ristorante\nstellato VIVA a Milano, Matteo Carnaghi come Chef Executive e Ida Brenna come Pastry Chef. Country House Villadorata, a Noto, \u00e8 un luogo che riflette perfettamente l\u2019etica gastronomica della cucina di Viviana Varese. Si tratta infatti di venticinque ettari di terreno con orto, agrumeti, mandorle, vigne e olivi. Un luogo magico dove \u201csporcarsi\u201d le mani, coltivare la passione del fare e sperimentare la sua cucina.<\/p>\n\n\n\n<p class=\"has-text-align-right translation-block\"><em>Scopri il <a href=\"https:\/\/xtramagazine.it\/it\/made-in-sicily\/\" data-type=\"post\" data-id=\"1965\" target=\"_self\">design made in Sicilia di Ferruccio Laviani <\/a><\/em><\/p>\n\n\n\n<p class=\"translation-block\">La cucina \u00e8 a base di ingredienti di produzioni locali, e i Presidi Slow Food di Sicilia ispirano la Chef nella creazione di nuove ricette, insieme ad alcuni suoi piatti storici. La novit\u00e0 2022 \u00e8 il grano. Viviana Varese ha voluto fortemente dare voce ad una delle pi\u00f9\u2000antiche tradizioni in cucina. La ricerca dei grani autoctoni siciliani, come la Timilia, il grano Maiorca, Russello e Senatore Cappelli, porta Viviana allo storico mulino ad acqua con macina in pietra di\nAnnalisa Dibenedetto, originario del 1700 e situato nella vallata Santa Domenica.\nQuattro sono gli elementi che guidano i percorsi gastronomici proposti: Aria, Acqua&amp;Terra e Fuoco. Per ognuno dei quattro menu, verdure dell\u2019orto, pescato locale, ma anche erbe aromatiche o limone. I menu Fuoco prevedono solo barbecue e forno a legna, per piatti dal sapore caratteristico dell\u2019affumicatura.\u00a0<strong><a
