Orma, il ristorante di Roy Caceres aperto ad aprile, distribuito su due piani, \u00e8 sofisticato, accogliente e informale. \u201cFil rouge del progetto \u00e8 l\u2019organicit\u00e0 delle forme che insieme alla scelta di materiali e toni naturali prelude in modo eloquente alla genuinit\u00e0 delle materie prime e all\u2019autenticit\u00e0 dei sapori, dando forma a uno spazio avvolgente dove gustare fino in fondo l\u2019esperienza conviviale\u201d, afferma Alberto Bovo, founder e CCO dello studio Hangar Design Group, che si \u00e8 occupato del progetto di interior design e di branding. Caceres esalta la ricchezza del territorio italiano contaminandolo con la sua vena sudamericana mantenendo il focus sul gusto e sull\u2019 ingrediente. Due i menu degustazione: \u2018Tracce Indelebili\u2019, cinque passaggi con i suoi piatti e \u2018Tracce Correnti\u2019, otto nuovi e inediti piatti che raccontano l\u2019evoluzione della cucina di Caceres. Per quanto riguarda la proposta \u00e0 la carte \u00e8 presente una lista di sedici piatti denominata Orme divisa tra antipasti, primi, carni, pesci e dolci. Tra le Tracce Indelebili non potr\u00e0 mancare S-foglia, un piatto ispirato a un viaggio in Cina, un raviolo cinese con un tocco di italianit\u00e0, che gioca sui contrasti tra la cremosit\u00e0 e la dolcezza del ripieno con il sentore amaro e piccante della crema di arance e il rafano sulla base del piatto. Tra le Tracce Correnti invece merita una menzione il carciofo, di cui lo chef ama la cottura alla brace, che esalta utilizzando le foglie abbrustolite per fare la salsa su cui poggia guarnito con uova
