Today, the Convento Francescano Experience Hotel renews this legacy through a sensitive restoration that breathes new life into the complex founded in 1320 to safeguard the relic of the Holy Wood brought from Jerusalem. This return to origins also mirrors that of Alberto Carrato, whocame back to his native land to create a project capable of weaving together memory, hospitality, and a profound sense of place. Alongside him, his mother Patrizia Portolano oversees the Osteria del Convento, while his partner, sustainability manager Maria Chiara Faganel, develops a model of tourism grounded in local resources and meaningful relationships with the surrounding community. The restoration has carefully preserved the building’s historic fabric from its frescoes and original plasterwork to its stone arches and columns transforming the former friars’ cells into seven individually designed rooms and suites, each with its own distinct character. Natural materials, thoughtfully curated furnishings, and selected icons of Italian design define interiors that strike a harmonious balance between heritage and contemporary refinement. Within the cloister, dominated by the fourteenth-century bell tower, lies the Osteria del Convento, an intimate dining venue reserved for a limited number of guests. Its cuisine is deeply rooted in the surrounding landscape: vegetables from the convent gardens, aromatic herbs, the daily catch from Palinuro, and recipes drawn from the region’s agro-pastoral traditions. A short distance away, nestled among olive groves, the swimming pool offers guests a secluded retreat, while the Orto Bar completes the outdoor experience. Cooking workshops, wine tastings, boat excursions, open-air screenings beneath the stars, and astronomy-focused activities foster a direct connection with the territory, embracing a slower rhythm far removed from the conventions of mass tourism.
