The menu officially opening the new course of Ristorante Carignano at GHS-Grand Hotel Sitea, signed by Davide Scabin, is called Ral 6001 classic. Ral 6001 classic is a thirteen-course tasting menu alternating great classics with novel dishes. The serving order is unconventional and follows the “Up & Down” logic. There are no à la carte offerings (but attention to dietary requests is assured) for this release, which features contributions from sous chefs Francesco Polimeni and Kevin Gardini and pastry chef Matteo Dinoia. For wines, you can decide whether to accompany the tasting with a pairing developed by maître-sommeliers Nicola Matinata and Elisabetta Riccardi, or choose a label from the cellar.
